Chicajuna is a popular Southern Chilean dish consisting of rice, beans, fish chunks, chipotle seasoning and fiery habenero peppers.

Traditionally, Chicajuna is consumed on the first day of spring, and its strong flavor marks the transition from the blander winter cuisine to the more lively, flavorful food popular in the summer.
