Chop Suey is a Chinese dish consisting of a stir-fried mix of vegetables, together with either chicken, beef, shrimp or pork, and gravy. It is served on a bed of rice.
There is a long-held belief that the dish was born in either San Fransisco, by Chinese immigrants who came to California in search of work; or New York, as a result of Chinese ambassador Li Hung Chang's cooks, who invented the dish for his American guests at a dinner on 29 August, 1896. However, it would appear as if chop suey's roots can be traced back to the Toisan region of Canton, China and was probably introduced to the U.S. by immigrants from that region, who then made use of local vegetables in their dish. 
The name is derived from the English pronunciation of the Cantonese words "tsap seui", which mean "mixed pieces".
