Lutefisk is a Scandinavian dish made from cod that has been pickled in lye (caustic soda).
Preparation takes upwards of two weeks.
Lutefisk, pronounced loot-a-FISK, hearkens back to a day before refrigerators when being able to "put-up" food for storage was a necessity. The lye must be washed off thoroughly, using several changes of water before the fish is deemed reconstituted and fit for human consumption.
Even when the cod has been prepared correctly, when all precautions have been taken to ensure a good end product, younger members of the family tend to turn their noses up at such an "old country" dish.
