The carbohydrate-insulin model is a controversial hypothesis claiming that high insulin leads to weight gain and that simple carbohydrates (non-resistant starch and sugar) raises the most insulin.[1] The hypothesis developed from figures like Gary Taubes in the mid 2000s throughout multiple publications such as “Good calories, bad calories”.[2]
