Dehydration is the removal or lack of water. Food is often dehydrated to increase shelf life, and reduce shipping and storage costs. For example, milk with some of its water removed is sold as "condensed milk".

Dehydration can also be a medical condition. For example, if an athlete looses too much water during exercise, he is said to suffer from dehydration.
