Mushy peas

Mushy peas are dried marrowfat peas which have been soaked overnight and then boiled. They are a great favourite of the north of England and are a traditional accompaniment to fish and chips, and normally purchased from a local chip shop. Local variations include Lancashire 'black peas' which are an acquired taste.[1] Black peas bear similarities to Carlin or Carling peas served in the north-east of England.
Canned peas have extra colouring added and appear to be emerald green. Home-cooked peas tend to be a pale grey-green colour but their taste can rival the finest hummus or foul medames.
Mushy peas are best served with salt and lashings of vinegar.
