If he said the sound shared by the English words 'your', "you're", and 'yore', he most certainly meant the contraction of 'you are.' Now if he wrote the quote and actually used the word 'your' then that would be a different matter and the word 'your' would have to stand. However, since no source (interview, letter, etc...) is given for the original quote I am assuming that he used proper English grammar, in which case the word would be "you're."
