Stilton is a type of white, crumbly [[cheese]], manufactured in the East Midlands of [[England]]. It is named after the village of Stilton on the [[Great North Road]], not because it is made there (it is not) but because it came to wider public attention through its availability at a busy posting inn there. Stlton comes in several varieties: white Stilton (the basic cheese); blue Stilton (the most popular variety, where a marbling of blue mould has been encouraged to add a salty tang); and Stiltons incorporating a range of fruits, including apricot.
