Varieties of sushi
- Nigiri-zushi ("finger sushi") - finger-shaped slices of fish placed over oblong rolls of rice.
- Maki-zushi ("rolled sushi") - fish or vegetables rolled up into cylindrical shapes with rice.
- Chirashi-zushi ("scattered sushi") - pieces of fish, roe, and vegetables scattered in a bowl.
