Doneness

Doneness refers to the temperature a piece of meat is cooked to.

Unlike other cuts of meat, various levels of doneness are acceptable for a steak.

  • Rare is marked by wide separation of component particles or having an unusual quality, merit, or appeal. To order a steak or other meat 'rare' means for it to be only lightly cooked.
