Stilton is a type of white, crumbly cheese, manufactured in the East Midlands of England, known for it's distinctive and strong taste. It is named after the village of Stilton on the Great North Road, not because it is made there (it is not) but because it came to wider public attention through its availability at a busy posting inn there. Stilton comes in several varieties: white Stilton (the basic cheese); blue Stilton (the most popular variety, where a marbling of blue mould has been encouraged to add a salty tang); and Stiltons incorporating a range of fruits, including apricot.
