Buddha's Delight, also called fat choy after one of the main ingredients, is a vegetarian dish popular in China and Southeast Asia. As the name suggests, it was originally made by Buddhists, but it is now popular among non-Buddhists as well.

The dish has many variants; the most common ingredients are carrots, peanuts, snow peas, bamboo shoots, tofu, mushrooms and lotus seeds. The main ingredient is a type of moss called hair weed, but due to the expense it is not always used. Each ingredient has a special significance.
