It is named after the village of Stilton in [[Cambridgeshire]] where it first came to wide public attention through its availability at a busy coaching inn there. Stilton comes in several varieties: white Stilton (the basic cheese); blue Stilton (the most popular variety, where a marbling of blue mold has been encouraged to add a salty tang); and Stiltons incorporating a range of fruits, including apricot.
