The pope is only infallible if he makes a statement "ex cathedra" which means in his role as head of the catholic church on behalf of the catholic church. So if a pope writes a letter to a scientist, he is not infallible. Neither was the Regensburgspeech by Ratzinger infallible, because he spoke the academic Ratzinger, and not as pope of the catholic church. Infallability only applies to very special occasions.
