The term German-American, especially in its hyphenate version typically refers to American of German descent, and not to people that hold both passport, maybe because both countries subscribe to the view that you should only have one. Just like other hyphen American in the 19th century it is commonly understood that they were Americans. So, I see no point in complaining about that fact.
