Simple answer:
Science goes through rigorous peer-review and retesting.
Most 100 year old history books aren't reliable- why should thousand year old text books be treated any differently than one of those?
The stories they list aren't testable, or falsifiable, or generally evidenced by anything in nature (as they were written anonymously based on the beliefs of the times), so there isn't a reason to use scripture as scientific materials.
There is no reason at all to think that they are scientifically valid without first validating them (which is the opposite of what has been shown).
