Mayonnaise

Mayonnaise (often referred to as mayo) is a condiment made with eggs, vinegar and oil and may have herbs added for flavor. It is an emulsion of the oil and vinegar and may separate if not mixed properly. The use of electric mixers, food processors or blenders have made this tedious task much easier.
For home use mayonnaise is typically purchased from the supermarket and not made from scratch. For those on a diet there are low-fat versions and substitutes like Miracle Whip.
