Science differs from other methodologies of classifying knowledge in that a scientific theory is a description of the world which can be disproved; this is known as falsifiability.  It is this property which distinguishes science from other possible methods of discovering knowledge such as religion, which cannot in principle be falsified.  For example, if a person floated into air, this would disprove gravity, whereas there is no similar disproof for, say, the existance of god.
